Garden-Fresh to Gourmet: A Farm-to-Table Tale at the JW Marriot, Maasai Mara
When I received an invitation to a garden party at the luxurious JW Marriott in the heart of the Maasai Mara, I was ecstatic. It promised an experience of refined elegance, a touch of adventure, and a culinary journey inspired by nature. As the 25th rolled around, I found myself boarding a chartered Cessna Caravan to Keekorok airstrip, ready for an unforgettable day.
Clutching a hot coffee in one hand and my safari hat in the other, I embraced the adventure that awaited me. Dressed in safari chic as per the invite, I could already sense that this would be no ordinary gathering. The JW Marriott Maasai Mara combines breathtaking surroundings with world-class hospitality, and this visit was set to embody just that.
We arrived to a warm welcome and were soon whisked away to the JW Garden, the heart of the Farm to Folk experience. As we strolled through this lush sanctuary, I was awestruck by the vibrant rows of fresh produce—cauliflower, lettuce, carrots, fragrant herbs like rosemary and oregano, and even a budding apple tree. There was something magical about standing amidst the very ingredients that would later grace our plates.
At the center of the garden was a charming gazebo, its long table adorned with green and earthy tones, perfectly blending with the natural surroundings. It was here that I truly began to appreciate the philosophy behind Farm to Folk. Every dish we were served celebrated the freshness of the garden’s harvest. This wasn’t just food—it was a love letter to sustainability, flavor, and the land itself.One of the highlights was a strawberry and raspberry jam inspired by Alice Marriott, the wife of the hotel chain’s founder, J. Willard Marriott. Handed down through generations, this jam embodied the JW ethos of combining tradition and modern luxury. The chefs were kind enough to share the simple recipe:
Strawberry & Raspberry Jam
- 400g strawberries, 300g sugar, juice of 1 lime.
- Hull and dry the strawberries, then macerate with sugar for 30 minutes.
- Cook on low heat until sugar dissolves, add lime juice, and simmer until set (about 20 minutes).
- Test by placing a drop on a cold plate—it should not run. Cool and store in a sterilized jar.
The Farm to Folk philosophy is more than a dining concept; it’s a movement. By sourcing ingredients from their garden or local farmers, the JW Marriott not only ensures exceptional taste but also supports the local community and reduces its carbon footprint. It’s a beautiful reminder of the importance of mindful dining—of knowing where your food comes from and savoring the journey from soil to plate.
